Harvest Time Begins at Louis Bouillot!

The harvest season is underway, marking a key moment for our Crémants de Bourgogne.

At Louis Bouillot, the harvest is more than just gathering grapes: it’s the beginning of a new, sparkling adventure. Every year, as the Burgundy vineyards bask in the final rays of summer, our teams get to work, handpicking the grapes that will soon become our prestigious Crémants de Bourgogne.

Here's a glimpse of our vineyards, with some bathed in sunshine and others touched by a bit of rain. This summer has been mostly sunny, but without the intense heat we've experienced in recent years. Periods of moderate warmth, balanced by occasional rain, allowed for a slow and steady ripening of the grapes, ensuring a perfect balance between acidity and sugar—crucial for creating sparkling wines.

A Precious Harvest

The harvest is a critical step in crafting our cuvées. This year, after months of careful attention, we’re thrilled to see grapes that are healthy and well-balanced, promising a beautiful vintage. Whether it’s pinot noir, chardonnay, or aligoté, each varietal is picked at its peak ripeness, guaranteeing the finesse and complexity that define our fine bubbles.

We begin in the heart of Burgundy, with the first snips of the pruning shears in our Côte de Nuits vineyard, in the En Bollery plot, primarily planted with pinot noir—the emblematic grape of the region that produces an exceptional Crémant. This plot faces the renowned Clos de Vougeot, home to an extraordinary terroir.

Our Grand Terroir En Bollery is the result of this harvest, boasting exceptional structure and a delicate, fruity aromatic profile.

A Passionate Team Effort

Next, we continue our harvest journey in our Côte de Beaune vineyards, specifically the Chenôvre plot.

The Chenôvre vineyard overlooks Savigny-Lès-Beaune at 410 meters in altitude, with a stunning view of Mont Blanc. These harvests have given us beautiful grapes, with chardonnays in perfect condition. These grapes will go into creating our Grand Terroir Chênovre, a 100% chardonnay cuvée that combines finesse and power.

Finally, we head further south to the Couchois area. In our Genièvres plot, ideal weather conditions have led to excellent phenolic and aromatic ripeness, heralding a promising vintage. Our expert and passionate harvest teams work hand in hand, meticulously picking each cluster by hand to preserve the integrity of every grape.

The harvest at Louis Bouillot reflects our dedication to excellence—a moment when tradition, terroir, and passion unite to create unforgettable Crémants de Bourgogne.
