Pure Origine 71/22

 

An ode to Burgundy, its terroirs, its origins. An authentic wine without pretence: simply pure.

This is the first edition of our newest cuvée: Pure Origine 71/22.

It is the fruit of a special union, the coming together of Pinot Noir and the unique terroir of Saône-et-Loire, in Burgundy’s southernmost reaches. This noble bottle proudly displays its origins: a single plot of young vines which unites these influences, rooted in the pretty hillsides of Couchois, just outside the picturesque village of Paris L’Hôpital.

Sprung from a precious terroir

A lovingly preserved landscapes of vineyards and orchards, the hillsides rich with history. Our beautiful plot of vines is organically farmed and always has been, allowing fauna and flora to exist in symbiosis. The famous dark grape with the clear juice is a force of nature which thrives here, its fruity character amplified.

The soil is packed with fossils, memories of a time when these rocks were an ancient seabed. Tough grey limestone, the building blocks for a powerful wine.

An expression of excellence

No blending is required to produce this high-flying sparkling wine: it is a pure expression of its origins, crafted to express the magnificence of this vineyard in 2022,* a scorcher of a year which bestowed us with generously proportioned bunches packed with promise!

The first thing that strikes you is the volume on the palate. The subtle buttery aromas on the nose gradually crescendo to reveal splashes of red fruit, raspberry and damson plum, building to a fresh finale crowned with a fleeting hint of kirsch, like an exclamation mark!

This sophisticated style is no coincidence; it is the fruit of an exceptionally careful fermentation, tailored to protect that purity. The grapes are delicately pressed and cooled to allow the must to settle. The only juice which makes the cut is that incomparable nectar derived from the first pressing, or “cuvée.” No sulphites are added, to ensure that the fruit character and natural vivacity of the wine remain intact. The wine is then aged for over 15 months on the lees, with minimal dosage to maintain and magnify that innate balance. It was a high-risk choice, but the gamble paid off: the impeccable results speak for themselves!

A bottle worthy of the nectar within

The packaging has been crafted in the same spirit as the wine: environmentally responsible every step of the way. Short plastic capsule, minimalist labels made of recycled paper, low-carbon cardboard box, recycled and recyclable bottle… All symbols of our respect for the environment.

Natural pairings

The earthy personality of this cuvée makes it a natural match for the fruits of the soil: mushrooms, vegetable spreads and gratins, aubergine caviar.

But it also pairs perfectly with Burgundy ham, chicken liver terrine, cod fillet with capers…
