Never the same, nor altogether different...
"Perle Rare ranges in amplitude in terms of flavour, structure and balance. Its richness comes from the ageing process which enhances it and gives it strength.”
The four pillars of a sophisticated style for a Crémant de Bourgogne
Grape varieties
The alliance of four Burgundy grapes: Chardonnay, Pinot Noir, Aligoté and Gamay.
Rarity
The rare cuvée is made exclusively with the vintage’s best wines.
Complementarity
Each year the divine proportion of half white and half red is adjusted in the quest for balance.
The terroirs of Burgundy (Côte d'Or, Châtillonnais, Couchois, Mâconnais and Beaujolais) complement each other.
Ageing
Finally, time seals this complex blend. We choose our wines when they are young, still closed, and can stand the test of time! Over two years, they will gradually open up with notes of toast and a hint of minerality.
All our Perle Rares are aged for a minimum of two years and thus classified as "Eminent".
Gastronomic pairings
As an aperitif, soft textures go well: olive cake, flaked salmon, cheese on cocktail sticks, rillettes.
Its density allows it to be matched with flavours that require acidity, such as oysters with vinegar and shallots.
It is also an excellent accompaniment for dishes with a sauce, complementing them with its liveliness, or for the melt-in-the-mouth texture of lightly seared tuna. Or even delicate fish such as grilled sea bass. And why not also with poultry or creamy cheeses, such as Cîteaux, or Chaource.
The expression of our terroir!
The 2021 vintage was marked by unforeseen challenges, revealing the strength and resilience of nature. Spring frost, followed by a cool, rainy season, unfortunately reduced our precious harvest. Faced with these hazards, the vine’s cycle slowed down, giving us a late harvest. A vintage which, despite the trials and tribulations, expresses all the richness of our terroir.
An elegant, rich Crémant
Discover this crémant with its golden colour and grey highlights. On the nose, complex notes of toast, pastry and honey, followed by delicate lemony and floral accents that unfold with elegance. Harmony reigns on the palate. The acidity is perfectly balanced, straightforward and precise. Hints of toast and tarte tatin reveal a fine evolution. The full, silky finish lingers gently, carried by a mellow sweetness that underlines the remarkable quality of this crémant.
