Grape varieties
The alliance of four Burgundy grapes: Chardonnay, Pinot Noir, Aligoté and Gamay.
Rarity
The rare cuvée is made exclusively with the vintage’s best wines.
Complementarity
Each year the divine proportion of half white and half red is adjusted in the quest for balance.
The terroirs of Burgundy (Côte d'Or, Châtillonnais, Couchois, Mâconnais and Beaujolais) complement each other.
Ageing
Finally, time seals this complex blend. We choose our wines when they are young, still closed, and can stand the test of time! Over two years, they will gradually open up with notes of toast and a hint of minerality.
All our Perle Rares are aged for a minimum of two years and thus classified as "Eminent".
Gastronomic pairings
As an aperitif, soft textures go well: olive cake, flaked salmon, cheese on cocktail sticks, rillettes.
Its density allows it to be matched with flavours that require acidity, such as oysters with vinegar and shallots.
It is also an excellent accompaniment for dishes with a sauce, complementing them with its liveliness, or for the melt-in-the-mouth texture of lightly seared tuna. Or even delicate fish such as grilled sea bass. And why not also with poultry or creamy cheeses, such as Cîteaux, or Chaource.
A radiant year!
The strength of the 2019 is due to how nature managed to adapt to a changing and rather severe weather pattern. The year started with a mild winter, resulting in an exceptionally early bud break. But then the spring saw some heavy frosts, particularly at night, which affected certain plots in the Beaujolais, Châtillonnais and Côte de Beaune vineyards. In July, the grapes were subjected to record heat, which impacted the volumes harvested.
But still, 2019 was an outstanding year! The harvests took place in sunshine and the grapes were healthy with a fine ripeness. Quantities were lower than in previous years, but wines with a flawless balance of acidity, fruitiness and roundness certainly made up for it. On tasting, the grapes displayed delicate aromas and a liveliness, promising a vintage of great potential.
The nose reveals a rich bouquet of toast, hazelnuts and honey. The palate is winey, with a beautiful vibrancy that expresses itself through aromas of little berries, such as raspberries.
Its low dosage brings out the natural balance of the wine.
