Behind the scenes in bottling our Crémant de Bourgogne
Becoming a Crémant de Bourgogne takes time, patience and a dose of passion! Each step is important, and at the moment some of our cuvées are embarking on the great spectacle of bottling, a step which allows the fermentation to begin.
Our future Crémant de Bourgogne is bottled with the sugar and yeasts of the “liqueur de tirage”. The second fermentation then begins: the sugar, consumed by the yeasts, is transformed into alcohol and releases carbon dioxide, which dissolves in the wine.
This is when the magic happens: our fine bubbles are born, the wine becomes effervescent!
